Anabasque Grilled Cheese

  • ½ cup unsalted butter (1 stick), softened
    2 tablespoons minced chives
    1 teaspoon honey
    2 slices pumpernickel raisin bread (or any bread that has small dried fruit but isn’t overly sweet)
    2 ounces Anabasque, shredded


Stir together soft butter, chives and honey. Heat a skillet over medium heat. Slather one side of each piece of bread with honey chive butter. Place one slice, butter side down in pan. Add cheese and place second slice of bread with buttered side facing out. Cook until golden brown.

Carefully flip and cook second side to golden brown and cheese is melted. (May need to turn heat to low and put cover on pan to melt cheese without browning bread too much.)

Serves 1
